- Syrup:
- 1 ¼ cup boiling water
- ⅔ cup sugar
- ⅓ cup vinegar use white, brown, or wine vinegar, but not balsamic vinegar
- Batter:
- ¼ cup butter
- ⅓ cup sugar
- 1 egg
- 1 tsp ground ginger or mixed spice
- ¼ tsp nutmeg
- ⅛ tsp salt
- 1 tbsp apricot jam
- ¾ tsp baking soda
- 1 cup flour
- ⅓ cup chopped dates or raisins optional
Sauce
Dissolve the sugar in boiling water.Add vinegar and boil for about three minutes, with the lid on.

Dough/Batter
Cream butter and sugar together.Add the egg, apricot jam, spices, and salt, and beat well.
Sift flour over the mixtureAdd optional chopped dates or raisins.
Dissolve baking soda into warmed milk.Mix everything together.
Spoon the batter into the syrup, but don’t smooth it out. Place the lid on the dish, and bake for about 40 minutes at 180°C (356℉), until golden brown.
