Ingredients
  

The Cake

  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp nutmeg
  • 2 tsp cinnamon
  • 4 eggs
  • 1 cup cooking oil
  • 1/2 cup milk
  • 3/4 cup sugar white
  • 3/4 cup brown sugar muscovado
  • 2 tsp vanilla
  • 3 cups carrots coarsely grated
  • 1 cup pecan nuts chopped

Cream Cheese Frosting

  • 230 grams cream cheese
  • 1/2 cup butter
  • 2 cups icing sugar
  • 1 tsp vanilla

Instructions
 

The Cake

  • Cream eggs and sugar together.
  • Add milk and oil.
  • Add vanilla and mix.
  • Sift dry ingredients together, including spices.
  • Mix into fluids gradually.
  • Mix in carrots.
  • Mix in nuts.
  • Bake for 35 minutes at 180°C (350ºF).

Cream cheese frosting

  • Mix cream cheese, butter, icing sugar, and vanilla together until smooth. Spread between the two layers of the cake, on top and on the sides. Garnish with nuts and ornamental carrots.
