Classic Fruit Cake

Ingredients
  

  • cup butter
  • ½ cup muscovado sugar
  • 1 tbsp light corn syrup
  • 2 tbsp bourbon
  • ½ cup chopped mixed candied fruit

For the cake

  • ½ cup softened butter
  • cup muscovado sugar
  • cups flour
  • 1 egg
  • ½ tsp ground ginger
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ cup warm water
  • 1 cup chopped mixed candied fruit
  • ½ cup pecan nuts chopped

Instructions
 

  • Preheat oven to 350°C.
  • Line the bottom and sides of an 8 inch square baking pan with heavy duty foil. Grease foil.
  • Cook ½ cup muscovado sugar, butter and corn syrup for about 5 minutes.
  • Remove from heat and stir in bourbon. Pour into prepared pan.
  • Sprinkle over ½ cup candied fruit.
  • Cream together butter and ⅔ cups brown sugar and add egg.
  • Combine dry ingredients and stir into egg mixture, work in the water.
  • Stir in 1 cup candied fruits and pecan nuts.
  • Bake in the oven for 35 - 40 minutes.
  • Cool down for 10 minutes and invert.
  • Serve warm with custard as a dessert.
